It is still cold, snowy and chilly out.  I am starting to get tired of this weather. I hope it is not storming next Saturday cause daughter wants us to visit her at the rehab center and it is a long drive down there.  I want to take alix with us so she can see her favorite aunt.  I think it would do both them good. Alix has been asking for Aunt Mary and she has been having seperation issues since her dad left.  She thinks Aunt Mary left too.

Mary seems to be doing much better. I hope she continues to improve. 

I can tell you it is fun making meatballs with a three year old.  She is the type that wants to help with everything so she helped me with the meatballs. Did a good job too.  I know I should have had the camera going but I am going to have to get a new one.  The one I have keeps giving me problems and I have trouble getting it going.

Not sure what brand I will get. Maybe a nikkon coolpix.  I have been looking at them.  When you are a grandma, you need a camera. *s*

I was looking for a new way to prepare cauliflower as a side dish and I found this easy recipe that is very good.
This delicious, cheesy casserole is a great way to enjoy cauliflower, and it makes a wonderful addition to the dinner table.

Ingredients:

  • 1 large head of cauliflower, about 1 1/2 to 2 pounds, cut into flowerets
  • ***Sauce***
  • 4 tablespoons (2 ounces) butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 cups milk
  • 1 tablespoon Dijon mustard
  • 1 1/2 cups (6 ounces) Cheddar cheese, mild or sharp
  • ***Topping***
  • 1 cup soft fresh bread crumbs
  • 1 tablespoon fresh chopped parsley, optional
  • 1/2 teaspoon ground paprika
  • 1 to 2 tablespoons melted butter

Preparation:

Boil or steam cauliflower in water until just tender, about 6 to 8 minutes. Drain and set aside. Grease a 2-quart baking dish. Heat oven to 350°.
In a medium saucepan, heat butter over medium heat. Add flour and stir until smooth and just bubbly. Add salt, pepper, and milk. Cook the sauce, stirring, until thickened and bubbly. Add the mustard and cheese and continue cooking, stirring, until cheese is melted.
Combine the cauliflower with sauce and spoon into the prepared baking dish.
This delicious, cheesy casserole is a great way to enjoy cauliflower, and it makes a wonderful addition to the dinner table.

  2. I'll have to try that recipe Garnet, I love Cauliflower. My favorite way to have it is just boil and mash like potatoes with lots of butter and salt and pepper. I boil it in milk! Just a little. Very tasty! I hope the weather holds out for you and your trip next weekend. It sounds like a needed one! Love Di ♥

  3. Oh how I love cauliflower and this recipe looks great. Unfortunately, cauliflower does not agree with me. So I will dream of days when I used to be able to eat it. I bet she was a little sweetheart making meatballs.

  6. I too, am tired of the cold, greyness and snow. I hope the weather cooperates at least so you can make the trip to see your daughter...bringing Alix will be good because kids bring such healing and happiness...she is adorable and looks as sweet as she is beautiful...she is blessed to have you as her grandma...letting her help you like you and taking such good care of her...I am sure her mommy appreciates all that you do...this recipe looks yummy...my little's like veggie's so they would like this I am sure!
